Hey Everybody,

I am going to be smoking 2 - about 5lb Pork Shoulders tomorrow morning on my Old Smokey Electric Smoker. Total weight of the 2 shoulders together was 10.81lbs. I bought these 2 cryo-packed together from Costco this afternoon and I have rubbed the pork with a slight variation of the Mild Bubba Q Rub that Chef JimmyJ posted on the below thread.

http://www.smokingmeatforums.com/t/100372/the-best-rub

I did not have any Turbinado sugar or sweet paprika, so I used white sugar and smoked paprika. I have also read the Instructions from the thread that Meowey has in the Pork Sticky so I plan on foiling them at 165°F I did not get any pictures of the pork before I put the rub on them. I was excited and forgot.

Here are the 2 pics of the shoulders with the rub on them.

I plan on using a 75% Apple Wood / 25% Hickory Wood mix when I smoke them and I plan on starting them at about 6 or 7am so I can get an early start on the cook. I will be updating this thread with more pictures of the pork butts after put them in the smoker and throughout the cook.

Let me know what you think

Thanks,

Patrick

Ok, I just put the meat in the smoker about 10 minutes ago and it was looking real good.  It is pretty nice outside right now for Florida, only about 78°F and there is not much wind at all right now. Below are the 2 pictures I took of the meat in the smoker.  As you can see this meat is almost touching the sides of the smoker and the 2 shoulders are touching each other in one spot.

And here is the 2nd pic.

I'll post a few more pics as the smoke progresses.

Thanks,

Patrick

My puter did an update in the middle of posting.  lol  didnt think it went through.

Lol, thanks David.

Now I am about 2 and a half hours in and the temps are sitting at about 130°F for both of the pork shoulders. They are smelling real good and I bet everyone who walks by is wondering what I am making. Here are a few pics of the pork.  Starting to look real good too.

More updates to come

Thanks,

Patrick
