Names Dion and I'm a smokaholic.

Live in upstate ny but friends in tx, tn, ky, wv, va, etc all agree I'm a redneck.

I've smoked beef, pig, turkey, chicken, duck, rabbit, pigeon, fish etc, etc

Currently I have a brinkmann dual thingy, propane on one side charcoal on the other with an offset box (yeah not the best I know)
Also still have a twenty five year old meco water smoker which is actually how I found this site. Right now I'm test burning my hybrid paint can smoke generator. It's a gallon can, four 1in bolts for legs, 8 15/64 holes in the bottom, the mesh from a strainer crowned in the bottom, soldering iron, threaded 3/4 copper fittings through a hole in the lid, street elbow to 2ft of 3/4 copper with a draft angle which is going to into the meco under the water pan. This is so I can make my first foray into cold smoking a belly that just finished a week of salt/brown auger/maple syrup rub. It looks like I'll get 2-1/2 hours out of one handful of chips using the iron to get it rolling then unplugging it. Tanks guys for the ideas.

Now I need to find a proof box for fermenting sausage. :)

Welcome aboard, Dion!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.
