I've smoked beef, pig, turkey, chicken, duck, rabbit, pigeon, fish etc, etc
Currently I have a brinkmann dual thingy, propane on one side charcoal on the other with an offset box (yeah not the best I know)
Also still have a twenty five year old meco water smoker which is actually how I found this site. Right now I'm test burning my hybrid paint can smoke generator. It's a gallon can, four 1in bolts for legs, 8 15/64 holes in the bottom, the mesh from a strainer crowned in the bottom, soldering iron, threaded 3/4 copper fittings through a hole in the lid, street elbow to 2ft of 3/4 copper with a draft angle which is going to into the meco under the water pan. This is so I can make my first foray into cold smoking a belly that just finished a week of salt/brown auger/maple syrup rub. It looks like I'll get 2-1/2 hours out of one handful of chips using the iron to get it rolling then unplugging it. Tanks guys for the ideas.
Now I need to find a proof box for fermenting sausage. :)
