Smoke For Tonight - Pork Loin With Homemade Honey Mustard Sauce, Spicy Camp Taters, Corn & Homemade Chocolate Mousse

Well it's Tuesday evening already & since I haven't smoked anything since yesterday evening I figured I'd better get on the ball & smoke something to eat...  2thumbs.gif

 

I settled on a nice piece of pork loin that I needed to use or freeze  36.gif

 

 

 

Here is the loin waiting for rub.

 

 

 

I gave it a nice coating of rub.

 

 

 

& in the MES it went. Running the AMNPS with oak & apple.

 

Now to figure out what to make with it  33.gif

Smashed garlic spuds and corn on the cob.... Gravy on the side....

Ill PM you my addy... thats what you can do with it!!!!! Lol... who ever bought that smoker for you.. it was a GREAT choice... done paid for itself with good food... and many more to come Im sure!!!

I knew there was a reason the price of pork has been going up again! I would do some smoker roasted veggies. Or smoke a whole cauliflower. Cover it with mayo, mustard, and a good rub. Throw it in there. When it's close to being done top with grated cheddar, and pepper jack (smoked of course)!!!

As it is you making it, the sides better have garlic.

Hey Dave - I made mashed taters yesterday so I went with spicy camp taters but I did go with corn on the cob  biggrin.gif

Ha!  icon_lol.gif  My camp taters have plenty of garlic in them  biggrin.gif  I grate some onion & press a bunch of garlic in a container then put the potato wedges in, put the lid on & shake them to get them coated nicely...

Just out of the smoker at 145 IT & ready for the rest.

 

When the loin was close to being done I fired up the CharGriller & got the camp taters & corn ready.

 

 

 

Here are the camp taters & you can see plenty of garlic  banana_smiley.gif

Ok here we go...

& here it is plated with the honey mustard sauce.

 

I make my own honey mustard sauce & just made some over the weekend. I decided to try using it as a dipping sauce for the loin & it was quite a good combo  thumb1.gif  This really was a good meal - super tender, moist, smoked loin with grilled corn & spicy camp taters - perfect choice for a Tuesday evening  biggrin.gif

This is another dessert I make that is really easy & only takes a couple things.

 

 

 

Dark chocolate makes it very rich & satisfying - a nice ending to a good meal  icon_smile.gif
