last minute wings... I wing'd a Scarbelly style..

So... someone asked if I would smoke some wings at the bar for customers before Cowboys game.. it was 330pm... I had nothing... so ..
Ive been wanting to try the scarbelly wings..so here is my hurry and do it style...
Went to first store closest to bar.. got some wings.. franks..butter..tonys cajun seasoning.. hauled ars home and grabbed the mini. . Some wood..some fuel..my injector and a pan.. by this time its 415... I needed to hurry for them to be done at least in a couple hours... so.. here is where my thinking started. .
Grabbed some butter out of grocery bag and into pan... 5 mins to bar...
First stop light... grabbed the tony's.. quickest creole butter ever..
Multi task... light chimney coals... and warm butter all the way through...
Open wing packages.. split flats from drums....season outside with tonys..and butter is melted through by now...
All injected and rubbed down.. 4:40pm...
Mini is up to about 225* in goes wings..
I put flats on top level..drums below.. I rotated grates have way through. ...
Mopped some of the leftover injection while I had the grates outs..
All done....they were Great... spicey.. moist.. even for a hurried up prep... they finished quicker than I wanted ( or planned) mini was running close to 300*
Man.. great flavor.. no sauce needed..will always do these... will try true creole butter instead of Texas dashboard spicey butter :)

I love it! Way to improvise!  I never though about cooking on a hot dashboard, or car seats.

there are many things you can cook in the car in texas... specially meat and cheese sammies.. just put in the dash for an hour before lunch time (Im usually on a contruction site so its perfect) .... amd you have a very toasted melt.... lol -and a great smelling interior if your using some smoked leftovers :P
