beats me, i've only began branching out lately into this and pork butts. Use smoker mostly for smoked keilbasas, burgers, and chicken bacon. 

it was tongue wagging good. the porch floor is clean from all the wagging and wont have to warsh my hair for a month at least. 
 
Looks GREAT *George*! It almost looks like barbacoa in your picture. Might be a good sub versus beef cheeks next time I make it... Good job JC!glad you got to take some for dinner! Its sucks when we cooks dont get to eat cause we to busy with the actual cook...clean up...

I saw them do Beef Shoulder Clod on an episode of BBQ Pitmasters. Here's the pic they used to show where it was. 


I think the contestants mostly treated it like a brisket, although at least one guy broke it down a bit before smoking since it was so large. Anyway, you can view that episode on the Destination America web site, if you're at all interested. Looks like you did a fine job, though!!
