New to sausage making. Questions

So I have a grinder, stuffer, german sausage kit and an amps on the way.

 

I read the directions on the sausage kit.  It doesn't say anything about blooming or putting the sausage in water after the smoke.

 

My question are:

Why do you put the sausage in water after smoking?

 

What is blooming and what's its purpose?

 

I'm hoping to make the sausage next weekend.  Thanks for the help.

Morning fish. Placing the sausage in water after it is cooked stops the cooking process and it also reduces the shrinkage or wrinkling of the casing. Blooming is where the sausage will take on color and the flavors will meld. Looking forward to seeing your process Joe

Thanks Joe.  I'll be sure and take pictures and good notes as I learned to do from reading on this great site.  I just ordered a Maverick 732 from Todd.  Can't wait to get started with this new hobby.

  You have done a very important thing in your Sausage making endeavor....Asking questions of people who have actually gone thru the mistakes and disappointments without quitting.As far as the questions you asked.I would have answered exactly the same way Boykjo did.My only other comment is .... be a little skeptical when advice gets a little far from food safety and too close to folk lore.Its just as easy to do it safely and tastfully as it is to be sloppy.
