Canned Salmon today......

Today was pretty busy....  guttin', cuttin', filleting, packing, cannin' and all the other stuff that goes along...

Almost 2 full canner loads....    29 pints....  one is in the fridge 'cause it didn't seal....  Salmon tomorrow in something.....  

Here's my fairly old All American Canner... I think I bought it in '78.....  

But it does have the "NEW and IMPROVED" rocker weight or what ever

it's called...  sure does make the canner easier to "watch"......


And the beautifully home canned salmon.....   Chum, Kita or Dog.... 

Depends on if you are buying, selling or advertising I guess...


And one (1) sockeye (Red)...... that's a jar of it on the left......

Nice Job Dave! I am going to can some Rainbow's someday. I catch so many 3-5 lbers here in CO and they usually all go to smoked trout nuggets and some whole smoked but canned looks great and sounds versatile.

What ingredients did you use to can them? Everyone seems to have their methods, like vinegar, salt, ketchup, stock, etc.

Holy Moley, that's some great lookin salmon!!! I'm so envious cause salmon is one of my favorite foods!!!

You were busy! I did 6 pint & half tomatoes and 6 pint & half bread and butter pickles and called it quits for a day!

Shane evening....  thanks...  Ingredients are 1 tsp +/- of peanut oil....  we used to add all sorts of spices and herbs, thought we'd try plain this batch....   If you smoke trout and can it...  may I suggest reducing the smoke to a half hour and then can....  Canning seems to intensify the smoke a ton....  At least in my smoked/canned fish....   smoked canned fish is really good....     Try a small batch of your normal smoked fish recipe except reduce the smoking time.....  adjust from there....

Peanut oil eh.. Mmm sounds great. Have you ever tried sesame oil? That would sure change thing around a bit.

Shane, No but that sounds really good.....  I know it's strong so maybe a drop or two....  Next batch.....

Jeremy, morning...    NO..... Bride wanted me to but..............   we have several packs of smoked trout I did a month or so ago.....  My buddy brought over about 40 trout for me to smoke....  took 2 days to brine and smoke them all...   I should have more salmon coming next month also, when the boat, I fished on in Alaska, returns....

Looks great Dave. Just looked and we are down to the last few jars of albacore. Wish we had got some to can this year.
Case, morning.....   I fished for several years out of Newport, in my sport, boat for Albacore....   I miss the fresh and canned albies....  That stuff is SOOOOO  good.....  You heading to the coast to get some ????

Man, does that look good. I had a friend who used to supply me canned salmon but he has had health problems. I am very jealous of your great looking salmon.

Dave....Looks Mighty Delectable......Da wifey calls it a "rattler", duh...lol..Looks like that pressure cooker been around da kitchen a few times, looks like the wifes... Have you ever made any Jerky out of your fish?.....Boy was askin', he is a fisherman and outdoorsman, nothing wrong with that....

I think so....  after filleting the fish, the backbone with the meat on it, into the smoker until it was totally dry and hard... Good stuff.....   I should make some soon....   Skipper, of the boat I fished on, should be bringing me more salmon in January.....  Chums,Dogs,Kita... whatever you want to call it.... I'll post pics when that happens......
