Hey Hey ! Long time no see everybody! Been a busy summer...My seester is coming home with her family so my oldest brother and I  are having a cookout

for them. I have 6 racks of baby backs I am smoking right now with pecan and apple pellets in my amnps...Just a word of advice to all you newbies out there...BUY AN AMNPS !!!! you wont regret it!  EASY!!! Reliable!!!   Ok?? Good!  On With the show!

I thought I would return from the vast cavern of the endless crazy schedule of my life to bring you all a simple idea I am using with great success.

I got these 2mil heavy duty poly bags from where I work and am using them to shake my rubs onto what I am smoking. Simple....saves a ton of clean up time...and does a fine job of completely coating butts, ribs, beef roasts, you name it. The key is to get heavy enough bags that the bones wont rip them. And to leave plenty of air in the bag when you twist it shut to leave room for the meat to tumble in the rub. Easy enough.

Remember 6 racks of bb back ribs, membrane removed(some smf member said it is easier to remove the membrane after running hot tap water on the bone side of the ribs...It works...thanks oh forgotten genius) Bilbos rub with granulated honey added for a little more sweetness. Pecan & apple in my amnps placed in the mailbox mod on my home made vertical dough-nut box smoker. 205* for 2hours then bump up to 220* for the remainder.

Well the cook out went fine...Had a great time with my brothers and most of my sisters (oldest sister lives too far away) laughing and joking about dumb stuff we did as kids.

The ribs turned out perfect! most people said no sauce was needed and they were very tender with just a little tug to get the meat off the bone. I didn't get many pics ...just a few before the line started.

Cut the rib into 2 rib sections. I gotta say these would rank among the best ribs I've done.

These were smoked in a propane fired vertical smoker with an AMNPS for the smoke! I would say the smoke ring is proof enough that you don't need charcoal to get a deep ring...AMNPS = AWESOME!!! SIMPLY AMAZING!
