Hello Everybody,


My name is Jeff and I live in Northern California approximately 50 miles NE of SF.  I'm new to this forum as well as new to smoking.  I recently purchased the Weber Smokey Mountain (18") but have yet to cook anything.  I plan on doing some ribs this weekend with this stock rig.  From what I've been reading BB ribs use the 2-2-1 method while spare ribs use the 3-2-1?


I plan on purchasing the DigiQ DX2 with Pit Viper (10CFM) but am still looking to see where the best deal can be had; any tips?


Although I've read you really don't have to season the unit I did run a full pot of charcoal through the thing one night at 8 pm.  I was shocked to see the lid thermometer at 227 at 9 the next morning!


I'm looking forward to learning as much as I can from all the members in this forum!

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a Kindle Fire, go to the main SMF page and click the Mobile button. Hello Jeff, and welcome to the forums!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Just ask when you need anything, and someone here will surely have the answer.
