Higer temps on the UDS with some Chicken Thighs

Nothing special thread.. I added another vent to my UDS and widened two of the others. I wanted to get a little higher temps... and I can get them now... Now have two 3/4 vents with ball valves, and 2 1" holes with caps... anyways.. did some simple chicken thighs just incase temps raised too much... I figured I couldnt hurt the thighs that bad>:)

figured Id try the amnps mod... see how it handles on a hot smoke on the UDS.. great so far!

325* .. about what I was wanting... Love it :)P


about an hour in.. flipped over, opened up the vents.. it sky rocketed to 400 quickly.. I removed the lid and have 1 foot flames giving a nice sear to the skin... yyumm yummm..



Out and rested about 30 mins..

thanks. sorry to waste some space.. but a few where asking about the mods...they went well. (maybe I should have posted this is the UDS F) anyways...

  Thighs are cheap enough to play with and try something different. If it isn't great, you still get to eat good smoked meat!

welcome back in action... :) and yea, get the drum built... I love cooking on them.. they amaze me more with every smoke...
