This past weekend we went on an excursion over to the beach. I had to pick up my oldest who has been visiting his mom for her summer visitation. It just happened that there was a wooden boat show going on in Toledo Oregon, and there was a fishing trip we could catch on my uncles boat on Friday. Thursday evening I loaded up the camper and my younger boy and we headed out. Fishing was decent and we ended up with a nice catch of rockfish, which we vac packed and threw in the freezer. We tried to find a few good patches of blackberries, but most of those ended up being consumed before making it home.
For Friday nights dinner I kept it simple and we made pizza sandwiches on the rocket stove in our pie irons. For those that have never had a pizza sandwich it consists of a English muffin, pizza sauce, and whatever topping you like. When camping these go into a pie iron or if you don't have one on the grill weighted down like a panini.
Checking to see how they were doing. These had Canadian bacon, cheese, pizza sauce and later tomato or pineapple.
Close up of the pie iron.
Since we are in a dry grassy area I used the base for the mini-wsm to hold the rocket stove. Also used briquettes in the rocket stove instead of sticks for the same reason. You don't get as hot of a fire, but it was plenty to grill the pizza sandwiches.
Saturday night I went a bit more all out and fired up the mini-wsm for some husk on corn, chicken drummies and a great big reverse sear steak. Pecan and cherry.
I started off smoking the corn husk on and after about a hour I removed the husks and wrapped with butter and salt and pepper. Added the seasoned drummies.
Chicken just about done, and getting ready to throw on the steak for some smoke time.
The view from the campsites. That's a GP paper/cardboard mill in the background.
Reverse searing! Some how I deleted the rest of my cook photos!!
My boys with a new buddy and his tug
My oldest has been paddling since he was 3. Here he is during the cardboard boat race as a support boat.
Out paddling the slough with dad!
Laser cut trophies for the cardboard boat race
I'm pretty sure that for the second year in a row the fire department won this one!
