BTW, this would have been a nice one for the Carousel, SMF Twitter and/or SMF FB...just don't need all the excessive non pertinent chatter.

Mods are watching but since it's your own thread, if you want to turn it into a 3 ring circus, that's your choice.

Rookie question: So with the reverse sear, you sear it first on the coals for a few minutes like a steak, then finish it off in the smoker?

Jeff the reason is you couldn't get the smoke absorption if you seared it first. The moist surface of the meat also helps the smoke adhere.
 
I am surprised at how much of the apple I could taste. Using mesquite I figured would be the dormant flavor
What was the ration of mesquite to apple that you used? I like a little of the mesquite or hickory but I generally cut it with a milder wood (usually about 75% fruit wood and 25% of the stronger ones). The smoke flavor just doesn't seem to be as overwhelming.
