T-minus 24 hours and counting!!! I hope the thunder storms we are having disperse a bit! Yesterday we had 50-60 mile hour gusts, sideways rain, and 3/4" hail! If we weren't on the Left Coast this thing would've had a name! Over here we just call them squalls...

I am going to try hams also.
 
I think I may do a pineapple glaze just for fun. Won't mop it on though until the last hour or so. This is all an experiment. The fiancée is gone tomorrow so I'll be doing some ribs also!!!!!
 
I am interested in how it will turn out with the cold and then hot smoke.

Me too!!! Right now it's in the Mini-WSM getting some TBS from the AMNTS and apple pellets! In a couple hours I'll fire up Mini #2 with briquettes and apple chunks and transfer the whole thing over. Going to do some naked baby back ribs too!

I totally feel your pain on the moldy brine....same thing happened to me, but I panicked and tossed the ham before I found out I could have just rinsed it and put it back in fresh brine. Glad you kept a cool head!

I'm tuned in and can't wait to hear how your picnic comes out for you! Happy smoking this weekend.....looks like much better weather. We officially got almost 3 inches of rain in Thursday's storm! That is unheard of us for this time of year.

I was really close to pitching it! Fortunately I didn't! Yeah the rain has been crazy this summer. Wettest summer I can remember.

You're killing me. We are going out of town tomorrow for a couple of days. I am smoking some of Bear's snack sticks for the road but no ham or ribs for me. I will have to live vicariously through this post. No pressure.
