So FWIsmoker has been on a jerk kick of late, and had me craving some jerk something or another. stopped by wally world on the way home and I decided on some tenders.. just cause they would smoke quick(er) ..
----Store bought Jerk seasoning...
----store bought jerk marinade (which was pretty good if you ask me.. for the cheap stuff)
----I injected both pieces with the marinade,
----and seasoned the out side with the jerky spice rub.
----Straight in the mini-wsm with some cherry chunks.. dialed it in at 225*
----Took about 2.5 hours to get to 130* then I seared to bring up to 165ish*
Dont mind the "char marks" hey, it adds character. actually a few bee's were buzzin around and I had to make a run for it... bad timing but no harm done :)
anyways.. Thanks Keith.. I got my jerk fix for the evening.. and have plenty of leftovers for some sammies tomorrow :):)
