2-2-1 Baby Backs!

Tried my first Baby Backs using 2-2-1:

 

 

Thin layer of mustard with homemade rub.

 

 

Let sit overnite.

 

 

After the foil a little ovrer 4 hrs in.

 

 

After 20 minute rest off smoker (Brinkmann offset with lump charcoal, mesquite and apple)

 

 

Nice smoke ring, vey moist!!

 

 

Platted with homemade garlic rolls and sweet corn

Tell us about your homemade garlic rolls, please?

 

That most likely sounds odd on a smoked meat forum but I think I've got the rib thing figured out but would love to hear about the garlic rolls biggrin.gif

No prob Bandman. There are various versions of these rolls on line but this one I found to be the best. I prefer to replace the milk with buttermilk or at least a half buttermilk half whole milk mix. Enjoy!! 439.gif

 

 

1 3/4 cups all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

5 tablespoons butter

1 cup milk (or buttermilk)

1 cup shredded Cheddar cheese

1/4 cup butter, melted

1 clove garlic, minced

Directions

  1. Preheat oven to 450 degrees F.
  2. In a large bowl, sift together flour, salt and baking powder. Cut in butter until mixture resembles coarse crumbs. Make a well in the center of flour mixture. Add the milk and cheddar cheese; stir to combine. Drop batter by spoonful’s onto an ungreased baking sheet.
  3. Bake in preheated oven for 12 to 15 minutes, until lightly browned. While biscuits are baking mix melted butter and minced garlic. Brush garlic butter over hot baked biscuits.

Thanks for the reply, I do appreciate it!  I'm going to do some stuffed pork chops this week and will give the biscuit recipe a try, we really enjoy trying new recipes and I rarely find one I don't like.
