Picante' Sauce that "aint from NYC"! (just a take on the commercial)

With the veggie basket that my daughter won....there were 3 huge 'maters and they were soft.  Plus we had some in the garden that needed to be used quickly.  I decided to make some Picante sauce....similar to my Blue Ribbon Salsa....but cooked and canned.  Here is the out come!


This is earlier this morning...so I dont have the yellow cast of "nite in the kitchen"


I used 4 'maters...and one was a yellow one.  Bell peppers, Jalaps, an onion, salt and pepper and a bit of garlic.

My wife started out making stewed tomato's last week and didn't have green peppers so she added orange and yellow and then other additions. I don't know what she made for sure but it was really good. Similar to Picante' sauce. Yours looks very good!
 
Thanks Todd and Alesia!  I just "made up" something and it look like what is in the Pace jar!  We shall see when Lynn and the kids taste test it.

Wow! That Picante’ Sauce looks Great!!

I think I found your posting just in time. I’ve been canning tomatoes for a few days now. In fact, I just turned off the gas so the pressure cooker will cool down and I can clean up my mess before the better half get home. I did up around 28 quarts of tomatoes and I still have about 65 pounds of Roma tomatoes, so I’ve been looking on the net for a good Picante Sauce or Salsa Recipe.

I put up 12 pints of your pickles and 12 pints of the Bread and Butter. Ok! I had 14 pints of your pickles but had to do a little testing and then I did a second test the following week. If your Picante Sauce or your Salsa is anything like your Sliced Pickle Recipe it will be fantastic. I sure would appreciate you posting it or IM me.

One more favor… I’d need it before next Monday. The wife is going to be home on vacation for two weeks and she kind’a frowns if she sees me on this forum. I’m sure she thinks a few of the members on this forum are a bad influence on me; I think it has something to do with the mess in her kitchen.

I think I found your posting just in time. I’ve been canning tomatoes for a few days now. In fact, I just turned off the gas so the pressure cooker will cool down and I can clean up my mess before the better half get home. I did up around 28 quarts of tomatoes and I still have about 65 pounds of Roma tomatoes, so I’ve been looking on the net for a good Picante Sauce or Salsa Recipe.

I put up 12 pints of your pickles and 12 pints of the Bread and Butter. Ok! I had 14 pints of your pickles but had to do a little testing and then I did a second test the following week. If your Picante Sauce or your Salsa is anything like your Sliced Pickle Recipe it will be fantastic. I sure would appreciate you posting it or IM me.

One more favor… I’d need it before next Monday. The wife is going to be home on vacation for two weeks and she kind’a frowns if she sees me on this forum. I’m sure she thinks a few of the members on this forum are a bad influence on me; I think it has something to do with the mess in her kitchen.

Only a FEW are a bad influence.......   WOW......  We all should be a bad influence.......     Tell her you are adding an addition on the house...   It's going to be a "MAN CAVE KITCHEN" so she can just buzz off........     STOP....  Don't tell her that.....   You'll be wanting to rent a room from me..  
 
This was a small batch. I had 4 large 'maters....red-orange and a yellow one. I rough chopped them. Added 1/2 a large yellow onion chopped. 4 jalaps sliced. A small green bell pepper chopped. Salt and black pepper....didnt measure :biggrin: and the juice of one lemon. Oh and about a tsp of minced garlic.

Simmered it until it was "soupy". WB canned the pint jars for 15 minutes.

Results from everyone.....it was spicy and they loved it. I dont eat 'maters so I havent tasted it. Smells great tho.

Thanks for the info Kat… I’m not so sure I dare add a little of this and that and think it would turn out ok.. I get in enough trouble trying to follow a good recipe. I made them fermented pickles something like Dave did; I couldn’t find the salt so I added 2 cups of sugar, and replaced the mustard seed with a little yeast. After 14 days I did a taste test, ate a half jar of them pickles, drank some of the brine and had to take a nap for a few hours.

Morning Dave, It’s not as easy as you think. Last month I wanted to go out looking for a dish washer; I thought it might make it easier when washing all them canning jars…. She told me that I was doing just fine…

Two weeks ago she had a baby monitor with a cam installed in the kitchen, everything gets sent to her cell phone; when I asked her why she thought we needed that, her reply was (because of the grandkids) Talk about me spending money foolishly….. Our grandkids live over 200 miles from us and the youngest is in her 20’s.

We talked about a Man Cave once. She thought it was a good idea. She figures I could do an addition to the barn (we live on a small farm and have nine donkeys) it had something to do with I’d be with the rest of them A _ _’s

One a good note.. The garden is just about done. I'm down to the tomatoes and cabbage. Two more weeks and it will be time to make some Kraut and with the rain we got for the last day or so the mushrooms might be out.

You are sooo welcome.  We just had some huge....I mean large like large grapefruit sized 'maters...that were going to go to waste...so I just winged it and came up with my own recipe.  I am going to have to write this one down in my notebook.  Folks are wanting more of it.

My tomato plants are a bit late this year but I had a lot of help from them Donkeys so I’m still picking and making most out of them.

Years ago a friend made some Green Tomato Jam and used something like the orange rinds in it. Thinking of making something like that in a few weeks; I’d make some next week but I need to use the blender. Ok! So I used the coffee grinder to grind up a bunch of mustard seeds and other spices, I do that all the time and never had a problem; I’m thinking it was the garlic. I thought the coffer grinder would buzz right through that stuff… Not!!

The cucumber plants are just about done for the year. I’m down to growing mostly the "fetcher" type cukes for the dog. I’d pull the vines but its good exercise for the dog and if we get a few warm days, the vines might start up again and I’ll do a few more pints of your slicers. Those were easy to make, taste great and can do them in small batches.

My garden is about done.  The "skeeters" are growing big out there.  Tried to pull stuff the other nite...and I am not going out there again until I have some Deep woods extra strength off or something.

I know what you mean, this summer we had a problem with them due to our wet spring. Seems like them rascals were a lot bigger and more of them this summer; the kids down the road would fill their pockets with rock because if two or three of those nasty buggers would land on one them, the kids might get carried away.

Doing up some smoked stuff pork chops and twice baked potatoes for supper. (Kind’a making up for that coffee grinder) I'll try to post some of the pictures later...

Yep! She keeps telling me that she is the best thing that ever happened to me and how I’ve never had it so good. Looking back, I almost things she’s right.

When I was single I was so bored, I’d spend my evenings hunting and fishing or have a few of the guys over for a BBQ and play a few games of horseshoes. On the weekends I might jump in to the plane with a buddy and fly up to Canada and go fishing in the summer or moose hunting in the fall.

I really got it good now. I don’t need to clean all those fish because I’m too buys to go fishing; I don’t need all that extra room in the freezer for moose meat because those days are over with and my fingernails are always clean. I might have dishpan hands but my nails look clean.

Gott’a give her a lot of credit; when I got the smoker, she went on line looking at reviews, she was reading up on this thing called an AMNPS she said it’s some type of smoking tray that makes smoke; after a few months of doing things ‘My Way” she finally ordered the AMNPS. Hey! That thing works so well, I figure if she was right about that, she mist be right about the other stuff…

If things don’t work out for you, let me know. The wife has a twin sister…
