First Spare Ribs on UDS (With Q-View)

I have been out of the country for the past month or so, and man, did I miss BBQ! When people ask what is American food, BBQ will be one of my first responses. Being away from the grill for a little more than a month, I was itching to get back to smoking. The wife wanted some ribs, and being the gentleman I am, I gave the woman what she wanted. These were the best ribs I have had in a while. They pulled from the bone just right, and had a perfect amount of sweet and heat. I applied a pre made rub and then added more brown sugar over the ribs. I was worried the sugar was going to get burnt, but it was great. These were spare ribs I did using 3-2-1 (three hours smoke, two hours wrapped with apple juice and one more hour unwrapped). It was more like 3-2-.5. I let the fire get away from me at one point, so they cooked a little faster. No worries here because they came out great. I used your basic hickory chunks mixed in with some off brand and Royal Oak charcoal in my UDS. I am still learning my UDS, but I don't have any complaints today except for I have to learn to be more patient. I am impressed with it so far, it is pretty easy to adjust and it is great not having to worry about adding charcoal or shifting around ash. I battled cooler temps this morning, followed by hot temps, followed by rain, but everything came out great. I might turn into a real Quer yet!

The learning is fun though, isn't it? Ha. If you don't mind, post some pictures and your recipe/step by step of that. I want to give those a go sooner or sooner biggrin.gif.
