So I grilled some up and it came out pretty good! I think this was better than the last batch I did. Don't know if it was because I ground it a little different or because I added the cure and seasoning before I ground it and let it set overnight. I really like the Walton's Cajun seasoning, it has a great flavor with just the right amount of heat!

Thanks Disco! All the Great sausage makers here on SMF inspired me to enter into this journey and I'm so glad I did! I have learned so much from these Great minds but know I have barely scratched the surface so I hope they stick around to keep teaching me!
I do want to say that sausage making is very work intensive but I find it very relaxing. I just spent 3 weeks TDY for work and it was a very stressful 3 weeks and I just couldn't wait to get back home, fire up the smokehouse and get busy in the kitchen. I just spent 2 days busting my butt in the kitchen and patio and I feel so relaxed now! All the stress from the past 3 weeks is all gone! It's kind of weird how working your butt off can be so relaxing and how making sausage or tending a smoker can make stress and the worries of everyday life just disappear! So now anytime I get stressed or life just starts to get in the way of happiness I just fire up my smoker and get in the kitchen and start busting my butt and let it all just go away!
 
I am impressed!!! That's some great looking jerky and sausage. Yep hog casings are a totally different experience to stuff especially when you are the only one doing it. 

Very nice job my friend. I gotta check out those Walton Seasonings.

I totally agree 100% with our smokers and whatnot relieving stress.. I can stay outside all day by thr smoker even when its 108* outside... but come Mondays when I have to get back to work I cant stand being outside... ;)
