I love my pulled pork/shoulder, sad face.....

But looking for a leaner pork cut for tacos, feedback?

Knightsilver. Use a Butt, just trim the excess fat and Smoke as usual.

 

Chicken and Beef makes great Tacos too. Trim , Smoke , Pull and make Tacos.

 

Being from Ar-Kansas , you know about fresh Salsa (Pico de Gallo) , a must for Mexican food.

To answer your question - I would get a boneless pork loin (choose your size) or tenderloin (more expensive), and grill (sear, then indirect), let rest, slice, then chop it up.  Might be a bit boring, unless you're planning on using sauces/salsas to top it off with.  Also, you should brine/marinade it, or just dry rub before (obvious right??)

 

Another (better in my opinion) option to make it more flavorful, is to cook it as you would, and take it off just before done temp (125-135 or so), then chop up, and add to a pot/deep pan, along with some caramelized onion/garlic, canned crushed tomatoes, some canned chipotles (if you like that), spices, maybe some wine, bring to a simmer, and let reduce uncovered for maybe 20 mins or so, or until the consistency looks good.

If it must be lean loin or tender loin is your best bet. I would smoke it and grind it while its still hot. Then sauce it up

Ive got Gerd/Acid Reflux, so simple tacos for me.

Ive been a 99% chicken/turkey eats for years, been trying new eats pazt few months. And new to the different cuts of prok and beef, very very little beef.

Feedback on trimmed pork sirloin or chops, besides loin? Again, Im unfamiliar with the cuts....

Heck, just grill/smoke some pork tenderloins (97% fat free), they are usually 1 to 2 pounds each. They usually come shrink wrapped. You can get them already seasoned or plain....I have seen southwest seasoned, which would be great for tacos. Just place on grill with a few wood chunks to flavor and then slice or chop to your heart's desire! Tender as can be!

If you want the leanest pork and not upset the GERD, I would recommend doing what I suggested in my reply (first paragraph, omit the offending spices/sauces). 

 

Also - since you bring it up, you can opt to choose boneless sirloin/loin chops.  They would cook quicker and you can control your portions more.

pulled pork with a pancake for your taco shell and a little vinegar based slaw and that is as good of a taco as you will ever have!
