Well I have my butt in the smoker at the moment. Rubbed it down with a blend called porky's that I have had great luck with and yellow mustard. This is only my second cooking on my mes 40 so I'm still breaking her in. Just hit a stall at 154 but still have hours until time to eat. I am shooting for anything over 165 since I have a new slicer thanks to a recent online order that I want to break in. Thinking sweet potato fries and pork sandwiches tonight. Might try pulled butt next time. I am cooking with a mixture of hickory and apple at 225, I had the temp higher earlier to get the temp above 140 in the 4 hour time Window which it easily did. Still learning, but this forum has been a wealth of info.

Ready to go in

pre heated and ready to start

I love the Window, a few hours in

Oh wow. This is going to be great!

I note you are going without foil. I haven't had the courage yet but you are inspiring me.

Looking forward to more Qview!

I have always smoked them on my stick burner with no foil and had great success. Just sticking with what i know. When i try a pulled butt i will probably foil. I am trying to keep the temp low but safe to keep it rather firm for slicing on my electric slicer. Even though it always comes out juicy and falling off the bone. I had planned to smoke a ham today but forgot one important thing........to thaw it out...im a dummy. So i had the wife run by the store and grab a butt last night.

Many people who I really respect on this forum don't foil so you are in good company.

Ok just ate and it was great. Only thing was the butt was so juicy it fell apart and I was not able to slice it (ill pull it sooner next time). I'm used to a stick burner so I was hoping for more bark. I'll do all hickory or mesquite next time to up the bark. Overall for my second time only on a electric smoker it was great.
