So, I wanted to try something new on the smoker.  I wanted to try my hand at smoking whole chickens.  After doing a lot of research on this site (reading lots of threads) I developed my plan and put it into action.  Thank you to all who have gone before me and left a lot of great advice.  Here's how the plan played out...  (I started on a Thursday evening for a Saturday afternoon smoke).

I made the brine Thursday night and placed into the fridge to cool overnight.  Friday morning I put two whole chickens in the brine and in the fridge until Friday night.  A total of 13 hours in the brine.  After rinsing and patting dry, the chickens went back into the fridge to dry out overnight.  Saturday morning I made my rub (a citrus poultry rub).  The chickens had another 13 hours of drying.  I decided to spatchcock the birds, then laid them out for a little EVOO and the rub--over and under the skin.  Here they are after all of that...


So then I started the smoker.  I was using my Char-Griller Pro with SFB, using Apple wood chunks.  I was going to smoke at the higher temps of 275-325*.  So when the smoker was up to temp, on the grates they went...


With an average cooking temp of 300*, 2.5 hours later and the the IT of the breast was 162*.  I took the birds out of the smoker then knowing that I was going to finish them in the over at much higher temp for a few minutes to crisp the skin.  Here they are as I pull them from the smoker...



After they came out of the oven from the finish, my dinner guests and I went straight to eating.  I even forgot to snap a quick pic as they were plated and served--couldn't wait any longer, it smelled so good.  :-)

Tasting Notes:  very good flavor--apple wood was a good choice, I'm sure cherry would be good as well.  very moist--I know there is debate on the subject, but I'm glad I brined them, someday I'll probably do a trial without brining.  The bottom line--the whole family and my guests LOVED IT!!!

I'm very encouraged by my first chicken trial.  Again, thanks to everyone on this forum which is a tremendous help--you don't even realize.  While I probably won't smoke chicken as often as I do ribs, salmon, etc; this was a very good experience.  I know I'll do a couple more, and then move on to a turkey someday.

Thanks C Farmer.  I will say this; brining sure does add a lot of time and effort.  If I can get the same moist results without the fuss, I'm willing to try.

Kgb. Hello and welcome.

As for Brining, a lot of the (bagged , whole ) Chickens, like Purdue and Tyson are (to an extent) alrerady Brined(the juice in the bag) and don't really need a brining unless you want to infuse more flavor into the flesh (savory or whatever).

I like to Brine for that reason , and usually add a bit of sweet and savory mixed for my taste.

Fresh farm raised birds may need the brine to keep them nicely moist.

If you are ending-up with a moist Chicken with no brine, then don't fix what's not broken...

Your method of cooking your BBQ  (anything) will be greatly improved by keeping a log of your cooks. Easy , a good learning curve , and a nice place to keep any good recipes you may create.

And I couldn't agree with you more on keeping a journal.  I started a journal from the very first smoke (even though I just got started).  I knew that if I did something I liked, I would want to know how to repeat it.  :-)   That's also why I refer to my smokes as "trials" and I number them.  Happy smoking.

I have been pushing that for years! There is no need, not even with fresh right from the yard chickens to brine for moisture. Flavor profile yes, moisture no. Same goes for turkey, brisket, pork loin, shoulder, ribs whatever. If you pay attention to your pit temp and the IT of what your cooking you will never need to add moisture. No need for spritzing, water pan, injecting, or brining for producing a nice moist juicy cut of meat.

Thanks dirtsailor.  I think I'm leaning toward your opinion as well.  I of course don't mind practicing the various combinations to find out for myself.  "What?!  I have to smoke more meat again?!  Oh darn!!"

   I will say that so far, my favorite rib trial result was done with spritzing the ribs every hour.  To your point, maybe the flavor profile was the good part and the moisture may be less affected.  I'm sure with many more trials under my belt, I'll find the perfect approach for me and my gear.  
 
Sorry Guys but I am on the other side of the street on Brining. It is a proven fact that Brining adds Moisture, Tenderizes and adds Flavor. Some companies " Enhance " their Birds with an 5-8% solution of Water or Chicken Broth and Salt, some add Phosphate so yes it is not necessary to brine unless it is for adding the flavor of Herbs and Spices you like...BUT...I f the Birds are all natural then they are absolutely better Brined. I agree the whole Brining process can be a PITA but it makes a difference even if the meat is brined for a couple of hours and you skip the drying process. There is also the concept of Dry Brining with just Salt but that is for another day. Here are the details...JJ

[font=Arial, Helvetica, sans-serif]In cooking, brining is a process similar to marination in which meat is soaked in a salt solution (the brine) before cooking. Brining makes cooked meat moister by hydrating the cells of its muscle tissue before cooking and by allowing the cells to hold on to the water while they are cooked,[/font]

[font=Arial, Helvetica, sans-serif]The brine surrounding the muscle fiber cell has a higher concentration of salt than the fluid within the cells. This leads salt ions to enter the cell via diffusion. The high salt concentration immediately begins to do its work on the protein complexes within the muscle fiber (see below for detailed explanation). The end result is the muscle fibers draws in and retain a substantial amount of water by both osmosis and capillary action. The meat’s weight can increases by 10% or more, allowing for greater moisture in the food after cooking. In addition, the dissolved protein does not coagulate into the normally dense aggregates, so the cooked meat seems more tender.[/font]

[font=Arial, Helvetica, sans-serif]The main structural component of meat is the myofibril which occupies about 70% percent of the volume of lean meat. Mybofibrils contain about 20% of protein, the rest being water. Thus the majority of water in meat lies in the myofibrils in the spaces between the thick and thin filaments. Myofibrils can swell to more than twice their original volume when immersed in salt solutions (Offer and Trinick, 1983) .[/font]

[font=Arial, Helvetica, sans-serif]In porcine meat three distinct water populations were identified using proton LF NMR: one tightly bound to the the muscle proteins; a second trapped within the myofibril structure; and the third corresponding to water outside the myofibrillar lattice or even outside the muscle cells (Bertram et. al. 2001).[/font]

[font=Arial, Helvetica, sans-serif]In meat water seems to be held by capillary action. The majority in the interfilament spaces with the myofribrils but a substantial part in extracellular space and the spaces between myofibrils. From Offer: the major effect on the increase in water mobility was probably due to the increased protein electrostatic repulsion leading to increase myofilament spacing. at a concentration of 4.6 - 5.8 %[/font]
[font=Arial, Helvetica, sans-serif]Changes in myofibrils in high salt solutions have been verified using phase contrast microscopy (Offer and Trinick, 1983; and scanning electron microscopy Graiver et. Al. 2006). At low NaCl concentrations, swelling of the fibers, and high values of water holding capacity were observed by Offer and Trinick (1983); Belitz and Grosch (1997) and Gravier et.al (2005). The increase in water holding capacity is likely attributed to the lateral expansion of myofibrils, which is coupled to protein solubilization (see below).[/font]
[font=Arial, Helvetica, sans-serif]While low concentrations of NaCl produced swelling of the fibers, and high values of the water holding capacity at higher NaCl concentrations the phenomenon was reversed, fiber volume decreased, the tissue lost its own water and proteins precipitated causing disruption in the matrix Gravier et.al (2005).[/font]

[font=Arial, Helvetica, sans-serif]The  thin filaments  are assembled by  actin  monomers bound to Nebulin. Which also involves tropomyosin; a dimer which coils itself around the F-actin core of the thin filament.[/font]

[font=Arial, Helvetica, sans-serif]McGee in his text "On Food and Cooking', pg 155-156 states that: “Brining has two initial effects. First, salt disrupts the structure of the muscle filaments. A 3 percent salt solution (2 tablespoons per quart/30 gm. per liter) dissolves parts of the protein structure that supports the contracting filaments themselves. "Second, the interactions of salt and proteins result in a greater water-holding capacity in the muscle cells, which then absorb water from the brine…The meat’s weight increases by 10% or more…In addition, the dissolved protein filaments can’t coagulate into the normally dense aggregates, so the cooked meat seems more tender.” (pages 155-156) .[/font]

[font=Arial, Helvetica, sans-serif]Olfer and Trinick (1983) explain that it is primarily the chloride ions in salt (NaCl) binding to the filaments that allows for the filament lattice expansion to occur (see below).[/font]

[font=Arial, Helvetica, sans-serif]Myofibrils have been observed by phase contrast microscopy, and are seen to swell quickly to about twice their original volume in salt solutions resembling those used in meat processing. Such swelling is highly cooperative. Pyrophosphate reduces very substantially the sodium chloride concentration required for maximum swelling. In the absence of pyrophosphate, swelling is accompanied by extraction of the middle of the A-band; in its presence the ,4-band is completely extracted, beginning from its ends. Offer and Trinick suggest that that CI- ions bind to the filaments and increase the electrostatic repulsive force between them. A crucial factor in swelling is likely to be the removal at a critical salt concentration of one or more transverse structural constraints in the myofibril (probably crossbridges, the M-line or the Z-line) allowing the filament lattice to expand.[/font]

[font=Arial, Helvetica, sans-serif]As long as the cross-bridges remain attached the lattice cannot swell much: conversely, if the lattice does swell appreciably, the cross-bridges cannot remain attached. Under such circumstances one can see why the swelling should be a highly cooperative phenomenon: when the cross-bridges dissociate they must all do so at the same time to allow swelling. When this occurs the thick filament backbone will no longer be stabilized and depolymerisation  occurs from the ends as with separated thick filaments.[/font]

[font=Arial, Helvetica, sans-serif]A final concentration of 0-8 to 1M (4-6-5.8%) sodium chloride gives maximum water uptake Xiong et.al (2000). Salting out occurs at about 90-100 g/l At higher salt concentrations a reverse effect was observed. Fiber volume decreased, the tissue lost its own water and proteins precipitated causing disruption in the matrix.[/font]

Comparing Brining Solutions

ARE YOU USING TOO MUCH SALT IN YOUR BRINE?

When it comes to brining food it is best to start with lower concentrations and/or brining times.

To get a better perspective of salt brines keep in mind that the salinity of fish and meat is around 9g/L which converts to a 0.9%  salt solution.

On average, seawater in the world's oceans has a salinity of ~3.5%,  or 35 parts per thousand. This means that every 1 kg of seawater has approximately 35 grams of dissolved salts (mostly, but not entirely, the ions of sodium chloride: Na+, Cl-). This approximates at 35 gm of salt/ 1 Liter of water.

The above brine table recommended by Cooks Illustrated contains 5 oz. of salt / quart of water: 
5 oz. = 142 gms. / 0.909 L = 156.2 gm/L or a 15% brine solution.

 of Georgia. (see article by Shirley Corriher in References) suggests using around half the amount of salt as the Cooks Illustrated recipe or 9.6 ounces of salt (272 grams) for every gallon of water.1 US gallon = 3.78541178 liters

[/font]3 percent salt solution (2 tablespoons per quart/30 gm. per liter) dissolves parts of the protein structure that supports the contracting filaments themselves.

[font=Arial, Helvetica, sans-serif]Loss of water during cooking[/font]

Even brining will not prevent water loss due to shrinkage during cooking, although since we are starting with more water --and the change in protein structure may make water expulsion more difficult -- loss of water is inevitable when cooking occurs at high temperatures.

[font=Arial, Helvetica, sans-serif]Bendall and Restall (1983) observed that the shrinkage rate was maximal at 60 °C and that a slow but significant shrinkage of the fibres occurred at 40°C. The melting temperature of fibrous collagen is substantially higher (about 60-65 °C)[/font]

[font=Arial, Helvetica, sans-serif]When single myofibres are heated in an aqueous medium up to temperatures of 90°C at pH 5·5, they do not shorten but instead decrease in diameter. This decrease begins slowly at 40° and reaches a maximal rate and extent at 60°, when the myofibre volume has decreased to 50% of the initial volume and about 60% of the cell water has been expelled. Expulsion of water from the myofibre is slow and incomplete from 40 to 52.5 °, but accelerates markedly to maximal rate between 57.5 and 60 °. The only muscle protein component so far identified which would on denaturation and shrinkage demonstrate this is the Type IV/V collagen.[/font]

[font=Arial, Helvetica, sans-serif]I[/font]t is the high tension which this collagen develops during heat shrinkage which is the main cause of extrusion of fluid from the meat.

Here is the recipe for Alice Waters' turkey brine:  Note this brine recipe uses half the amount of salt than that called for in most standard brines, but is in line with that of Reynolds (see above comments)

3/4 cup plus 2 tbsp kosher salt
3/4 cup sugar 
1 carrot peeled and diced 
1 large onion peeled and diced 
1 leek, cleaned and sliced 
2 bay leaves 
1 tbsp black peppercorns
1 tbsp coriander seeds
1/4 tsp red pepper flakes 
1/4 tsp fennel seeds
2 star anise
2-3 sprigs fresh thyme

In a large stockpot (16 quart or more) bring 2 gallons of water to a boil.

Add salt and sugar and stir until dissolved.Turn off heat and add veggies, then herbs and spices. Refrigerate till cold. Remove giblets from turkey. Add turkey to stock pot. Weigh down with a plate if neccessary to keep turkey below the brine's surface. Refrigerate 72 hours, then remove from brine and allow turkey to come to foom temperature. The recipe calls

True that birds not soaked in the solutions benefit from brining. Mine are usually Tyson and it isn't worth a slight flavor profile to brine.

Cooking at higher temps is critical to taking advantage of brined or solution soaked birds..
Reason being is the bird is in essence being high temp braised internally vs lower temps and letting more moisture evaporate.

Also who ever can't cook a bird directly over coals is missing out...the flavor profiles of drippings being added back is out of this world.

Yep, I can see the benefits from all sides.  And a lot of this comes down to personal preference (as in most things in life).  I have grilled chicken parts for hundreds of years.  And when I do basic grilling, I like keeping it real simple.  I simply drizzle a little EVOO, then salt and pepper.  No BBQ sauce or anything.  So, I think I'll be caring that over into my smoked birds as well.  This first time, not only did I brine, but rubbed as well both under and over the skin.  The amount of rub was too much for me, and almost overpowered the flavor experience.  I think my next trial will be:  brine, no rub, simply salt&pepper season, then smoke.  I want more of the basic chicken and smoke flavors.  And then, I'll probably do a non-brined trial after that.  With all the different variations, I'll have plenty of combinations to work with.

But thanks again to everyone for all of your sage advice and experienced opinions.  I love it.
 
Never used to brine and then I brined a turkey for Christmas and I never looked back.  I always brine now.  Great article Jimmy J.  I use the Slaughterhouse brine (found in the forums) with 1 lb Kosher Sea Salt in 2 gallons of water (5.66%).  I brine chicks for 12 hours and turkeys for 24 hours.  Then they rest for a minimum of 36 hours.  Most awesome.
