New to the forum but not totally new to smoking meat and fish. I received a Big Chief electric smoker as a Christmas gift 10 or so years ago and have been mostly making moose jerky and smoked salmon with it. I have been yearning for a better smoker lately so any recommendations from you folks are greatly appreciated.
Living in Ontario, amongst the great lakes, I hunt and fish a lot so I'm always looking for new recipes and techniques and hopefully I can reciprocate. I normally use hickory chips for most of my smoke so I'll be paying more attention to recipes using other woods just to try some different flavors.
