Hi folks my name is Stuart and i live in Adelaide, South Australia.

I have joined this site in hopes to learn as much as possible as well as make a few friends who also enjoy creating their own foods. As stated in the title I am very new to the whole smoking scene and currently only use the standard hot smoke galvanized box with the spirit burner. However i have been looking into cold smoking and have recently aquired a two door cool room/ freezer which was no longer working in exchange for some heavy lifting. Good swap i thought, and what a smoker box was my other thought. So upon a little searching around not only did i find this amazing site but i also found a Bradley cold smoke generator which i plan on fitting to the side of my smoker/ freezer. basically thats about how far i've made it and now i've hit a mental blank as to whether i should also fit a heating element to hot smoke as well or whether or not i need a chimney stack etc. I plan to hopefully perfect the art of making my own bacon, hams, kranskys, fish, cheeses, ribs i could go on but i'm sure that gives you a picture.. lol. Again i'm completely new and am aware of curing and such but never tried it nor have i ever done much apart from fish, sausages, and ribs in the small hot box so my mind is an empty sponge at this point wanting to absorb any knowledge or ideas anyone might wish to share with me. I would be most appreciative to anything anyone has to offer and look forward to meeting some new people. Thanks for reading

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

 

Sounds like a great score. i'd think about being able to add heat. that would make a

Nice hot smoke house as well. I sure do like to cold smoke cheese and bacon.

Thanks for your welcome and your input David i do have one question if you might know, and that is whether an electric smoke generator would be sufficient enough. Im looking at the bradley branded as that is what is available around here. The smoking space is 177cm high 106cm wide and 52cm deep.

You should sign up for Jeff's Free 5 day E-Course, and it's great!  This is chock full of great information....no matter what your experience level might be!

Welcome fellow member of the Commonwealth. You'll love this forum. I just started smoking last fall and had limited success until I found this forum. I have learned so much from the kind members. They are generous with answers to your questions and there are a ton of great ideas in the postings. One of the ways I learned the most was posting my projects with pictures and I always got support, advice and suggestions for differing ways to do things.

 

I know next to nothing about smoker builds but I do own a Bradley digital smoker. Their pucks generate a lot of smoke. I actually switched to an A-MAZE-N Pellet Smoker to cut back on the amount of smoke in the small chamber.

 

I'm sure someone who is better at builds will give you more information.

 

I am sure you will love this forum as much as I do.

Thanks for the welcomes and cheers on that bit of info Disco, I did just send those dimensions of the freezer to the manufacturer and am eagerly awaiting a reply. My next design challenge would be fitting a heating element with and external control... hmmm 33.gif

Hello Stuart, and welcome to the forums!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  When you can't find the answer you're looking for, just ask and someone here will have the answer.  Good luck with that freezer conversion...it sounds like you're on your way!

Thanks guys and my next stop sounds like the build forum.. I will have to put a thread of my own up by the sounds of it detailing my progress as i build this baby. At the moment i am just gathering parts and pieces as well as still designing but when i start i will post a new thread dedicated to the build. And yes i will most certainly put up my own Qviews in the future as i plan on making all the good things and everything in between. im looking into making my own puk's for the smoke generator and have found one video on you tube but apparently finding saw dust in my neck of the woods is extremely hard unless im willing to be over charged greatly for a bag sold as smoking dust. My next thought was to approach a few orchid properties and see if i could purchase or assist in cleaning up any dead branches etc off any fruit trees, then i need to establish the most effective way of creating my dust in both a course and a fine grade... I'm sure i'm making little sense to some but im fairly excited to finally have this project almost underway.
