Thanks guys! good advice. Although It turned out great I will start at a higher temp and start it earlier. I'm thinking around 250-275 and give it all the time it needs to come up to temp. I'm going into town today to my local BBQ supply store and getting a duel probe thermo! My wife and I are going to try some polish sausage today I think. From what I can tell it should be 160 degrees for 3-4 hours? Thanks again for all your advice I cant wait to do this again!
