I do have a maverick. My MES40 is a little off as well but the other way. I set it at 260 and it cooks at about 245-250. Seems the longer I cook, the greater the difference in temps. when the cook was over, it was set at 250 and the smoker temp (maverick) was only showing 225. I was shocked at the timeframe too. If I would have known it was gonna take 8 hours, I woulda slept in a little.
Meat was tender and very juicy. Bone came out without any trouble. The parents both said it was the best pulled pork they had ever eaten! I take that as a great compliment.
I really appreciate all the help and comments from you all. Can't wait for next weekend. Think I'm going to try a brisket!
