Thanks for the suggestion I am modifying my grilling recipe for jerk chicken which uses a wet rub put on overnight. Then I will put it on my Bradley but I can't go over 275 with the AMNPS so I am sure I will be crisping it up on the Weber Genesis. I am sure of the recipe, I have used it many times. It will be interesting to see how it translates to smoking.DiscoThanks Disco.. Just did the jerk rub only. This rub didn't have much salt so I lightly salted before adding the rub. If you're not going to be able to smoke over coals at least smoke it hot! Good luck on the jerk!
