Bacon wrapped Tenderloin w/ all the fixins' Q-view

Picked up a 3lb. tenderloin last night at the store, and decided I needed to make some fixins to go with it.. 

I decided on my first homemade cole slaw and potato skins.. And for desert, my grandmas apple crisp :)

Made the cole slaw last night and pulled the bacon out of the freezer. The cole slaw tasted much better today than it did last night. It is hands down the best slaw I have ever put in my mouth! I combined a bunch of recipes and.. WOW it is yummy! 

To my surprise when I opened the tenderloin, it was two small tenderloins in the package. I wrapped them together in bacon after I dusted them with some rub.

 
Here it is on the smoker.. Running at 220 with lump, briq, and apple wood chunks 


Tossed on the potatoes about 30min. later. Cut them in half and scored them..


Here they are after I spooned out the insides and loaded them with colby, cheddar, and bacon!


After about 30min in the smoker to melt the cheese and give them some smokey goodness!


Here is the apple crisp.. Not much to look at but holy smokes is it delicious!


Here is the tenderloin after it was cooked to 140 IT and then I did a quick sear on the gas grill to crisp up the bacon, then I wrapped it in foil for a hour..


Sorry, couldn't wait and took a bite before the picture! Everything was a home run!! The lady doesn't like cole slaw and had seconds of this! The loin was super tender and moist with a great smoke flavor. The skins were tender and cheesy with a hint of smokeyness. The apple crisp was just as good as when grandma used to make it!

Thanks again to everyone here, without your tips, tricks, and wisdom, I would still be trying to figure out how to start a fire ;)

Good looking loin.. and the taters.. spot on!!! Sorry I never paid attention to this thread.. even know it was featured in front of my face :) Keep it up.....
