Maple Glazed Pork Ribs, Apologies to the Traditionalists

Disco is absolutely right...If you ain't puttin' smoke to the meat or are in Foil, there is no reason to stay outside feeding wood or burning propane. Well I guess one good reason is to have an excuse to Drink Beer and be left alone 'cause you're working the Smoker. But there is no shame in using an Oven. At this point both are Boxes generating Heat. TurnandBurn, you live in OK, you guys get some Cold weather during the Winter, but up north in PA and for sure in Canada, if you want smokey goodness November through March you appreciate getting out of the frigid Cold and stinging Wind and finishing in the Oven...JJ

oh i know..ive smoked in hot heat, ice cold negatives, you name it...i was just saying i go foil all the time, and smoke the whole way thru. im sure if i needed the oven id have to ask the wife for permission cuz thats HERS! daddys got his own toys and mama sure aint lettin me put ribs in her oven..lol.

Thanks JJ. I have smoked in weather cold enough to lose my left one.

I'm not afraid of the missus. I'll use the stove anytime I like. The cheque is in the mail.

Disco - thanks for posting your recipe.  My ribs are foiled now(after 3 hours at 230 over a 1/3 full AMNPS of Todd's Pitmaster's Choice.  I just whipped up your glaze and its cooling now.  However, the initial reaction from my 11 YO daughter(after I drizzled a bit of your glaze on the back of a spoon and let it cool) was "can't we cook the ribs any faster?"

Sure sounds like its going to be a winner!

Disco - I'm not much of a picture guy.  I just seem to get caught up in the "doing: part of whatever I'm involved in and forget to stop and snap a few.  I will try to get a pic or 2 of the finished product(if my daughter lets me!).

I hear you. I really have to concentrate to remember to take pictures because I get into the cooking. However, one of the ways I learn the most from this forum is posting projects. People give suggestions and new ideas.

Hmmmm, how'd I miss this? Looks great Disco.....will give these a whirl soon. Maple stickiness on fingers, smoke, spices, sweetness...YUM. And nothing wrong with being frugal...lol....to me it's a great satisfaction to take a cheap, tough azz cut passed up by most others and turn it into something tender and sublime either in the oven, dutch oven or smoker.......Cheers, Willie

I know what you mean about cheap cuts. Sadly, people have found out that some of the "cheap cuts" taste good. When I was young, you could buy ribs for a nickel. Nobody wanted them.

After a few years of smoking i figured out that some may call it cheating , some may call it a crutch and some may say it's not smoking. But i have never had anyone turn their nose up at the table??

 I foil sometimes, i finish in the oven, i don't use thermometers very much anymore, I cook at high temps sometimes.

 But the final product speaks for itself.

 Foam, Have you tried Steens cane syrup ?

Cane syrup? I've never seen that product up here. Is it similar to corn syrup?

  It's a fairly strong syrup . More like molasses than corn syrup. very dark color

 A hot buttered bisquit with Steens? How can you comtemplate a pecan pie with no Steens in the house to make it? I make a Steens pumpkin pie with praline crumbles on top, makes ya wanta slap ya momma!  Until the Navy, syrup to me was one of three brands, Steens, Log Cabin, or Grandma Molasses. Now the only ones I keep in the house are Steens and real maple syrup, which I have to buy online and have shipped here. Grandma Molasses sorta dissappeared. Steens is nade with whats called "Blue Ribbon" cane. Its actually kind of purple at the joints.

BTW Eman I was brought up in a cane field not 200 yards from the sugar cane mill.
