Awesome; how are the hanging? (Stop it Foamheart, you have made me completely paranoid, now!!). I mean are they tied up at all? My ribs always start to fall apart once the get close to temp... I love ribs, but not enough to play with them on the smoker; I usually have one full day every other week to do a full smoke and worry about wasting a day (and the dime) on something I'm unsure of...
 
@smokeusum I felt the exact same way. I've smoked ribs 3 times now. The first was without advice and rendered into pig-jerky. Went in the trash.

The second and third tries were GREAT. I used the 2-2-1 method as described on this site. It's foolproof. I rub them down with yellow mustard then cover liberally with Commissary brand dry rub.

I made hooks out of clothes hangers that have perpendicular spikes that stick through the ribs. Keeps them from falling apart.

Below is today's result. Perfection.
