Hello from the UK

Hi fellow smokers, My name is Gary and I live in the county of Dorset in the UK. I recently purchased a new Brinkmann gourmet charcoal smoker, have owned one before and been pleased with the results. 4 pots of wood chips (oak, hickory, bourbon oak and cherry) arrived in the post this morning so I am looking forward to getting going. I think I will start with by smoking a large piece of Brisket on the lower rack and ribs of the upper rack. The marinades and rubs are fairly standard and I will smoke them over a mix of hickory and oak.

Some of the recipes and photos on this site look wonderful. I look forward to trying them. Next weekend I will probably try smoking a duck in a way I have done before. The skin is lightly cut at over. The marinade is soy sauce spring onion, black pepper and honey ( which I leave over night). the duck is then smoked over cherry. My mouth is watering just thinking about it!

We have a local company (Dorset charcoal company) that make top grade lumpwood charcoal so I have purchased 2 10lb bags ready to get going. This gives really good results and I have learned to be cautious when buying cheaper imported charcoal - fine for a BBQ grill but not for smoking.

Smoker are not very common in the UK, so I find myself having to explain to my friends what they are and what they can do. Then they try the food and are blown away!! :-)

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Hello Gary, and welcome to the forums!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  So many friendly and knowledgeable folks who really enjoy helping one another.  Just holler when you need anything, and someone here will have the answer.
