Porchetta isn't usually smoked, but because we live in a motor home with limited AC power & in an area where the temps are 98+ this week, we did the bulk of the cooking in the smoker with only the residual "smoke" from the walls of the smoker.
I also put a rack of oregano and sage in the smoker, and a pan of ketchup using a mix of chips.
