New to smoking. had 2 runs on a new 18.5" WSM. Here to learn more!
I stay in Southern California. Paramount to be exact. hope to hear from
fellow experienced smokers. so far on first one i smoked a pair of baby backs and
a pork loin (best ribs i ever had in my life) and second run was a couple of untrimmed racks of whole spareribs (they were ok) some of the meat mostly around the edges were very dry and hard... so instead of progressing im regressing. this is what prompt me to join and learn from fellow pit smokers.
