My new custom smoker http://www.smokingmeatforums.com/t/140447/1st-draft-of-my-smoker-build#post_1025883 arrives from the shop tomorrow and I'm looking forward to trying it out. I've decided on some leg quarters and rib ends tomorrow while I take temperature readings. Thursday will be a rack of spare ribs and som sausage, and I'll top it off with pork butt on Saturday or Sunday.
Any tips, warnings, or good advice would be appreciated. I'll be sure to q-view the whole process. Wish me luck.

First test. 4 leg quarters brined, dried and rubbed, 4 just rubbed, and some rib ends I picked up on the cheap.

That's about as hot as I can get my gauge to read without a roaring fire. My digital Taylor says 227. Holding steady with the firebox vent nearly closed.


My wife and daughter keep asking if its done. I plan on moving the temp prob to a leg quarter at the two hour mark.
 
Fairly certain I built my fire wrong. Tomorrow ill go with a bigger start, build up a nice bed of coals, then add chunks as needed.
 
I'm also enjoying the "making sure my temp doesn't spike babe, can you bring me another beer?" I wonder how long I'll be able to pull that off.
