Prime Rib (Properly Tasted!!)
Finally!! My Taste Buds Are Back!!
It's been more than 8 months since I lost two of my favorite senses (Smell & Taste). All of that time everything smelled and tasted the same----Terrible!!! Then a few weeks ago they started coming back, and now I am able to smell & taste Great Food again. All of that time I had two “Choice” Rib Roasts in my freezer, but I didn't pull them out, because it was too hard for me to get around, and what good would it do me to make the best tasting steak in the world if I'm unable to taste it???
Finally my tasting ability was ready for a nice Prime Rib, and below is how I did it:
I started with a Standing Rib Roast (Choice), weighing in at 5.36 pounds.
Day #1 (Prepping):
Rinse & pat dry with paper towels.
Coat well with Worcestershire “Thick” Sauce.
Sprinkle with Black Pepper, Sea Salt, Garlic Powder, and Onion Powder.
Wrap in plastic wrap, and put in fridge for an overnight rest.
Day #2 (Smoking):
11:30-----------Preheat MES 40 to 220*
11:30-----------Put foil pan in position #3
11:30-----------Fill 1½ rows of my AMNPS with Hickory Pellets, and light one end.
12:00-----------Put Roast on rack in second position.
12:05-----------Put AMNPS on support bars to left of Chip Burner Assembly.
3:00-------------Sterilize and insert Meat probe into center of Roast.
3:05-------------IT of Roast is 109*
3:30-------------IT of Roast is 122*
4:00-------------IT of Roast is 131*
4:25-------------IT of Roast is 138*----Pull Roast & take in kitchen.
4:25-------------Cover Roast with foil & put towel over to rest.
4:55-------------Take pics and carve. Roast IT now at 143*.
5:00-------------Plate with sides & Eat.
