Finally tackled my 1st Bone-In-Ribeye.  This one I had cut to 2" and weighed in ~ 2.5#.

Just used my regular grill for these.  Got temp up ~350 (not intentionally lol...was experimenting) and slapped 1 big chunk of mesquite + 1 big chunk of hickory in there....let it bathe in the smoke for about 1.5hrs, then hot-sear for 4mins each side.  Enjoy...


Rubbed down...



Ready to munch...



 
That is a good lookin steak!  I bet it tasted great...

Have you ever tried a reverse sear?  Put it in the smoker with your favorite wood smoke until the IT hits about 110* and then throw that puppy on a hot grill.  Mmmm...mmmm

Works great with pork chops too!  Below are some I did recently.

Thanks for sharing. Ive been thinking about smoking a rib roast for some time. Your post inspires me to get to it. I had a smoked rprime rib on a trip to alaska a couple years back and it was phenomenal! Need to reproduce that at home!

Any experience with smoking a rib roast as opposed to smoking a ribeye steak cut?
