Hi ya'll, I'm Charles and I have been smoking food for technically many years, but it was commercially when I worked in a locker plant. Now I started smoking at home and even though I've only done two pork shoulders and some cheese, I'm loving it. When I worked as a butcher it was just another part of my job, but now at home it's enjoyable. It's a nice hobby that my wife and I do it together. We also enjoy fishing together and can't wait to do some fish. Our son is an avid hunter and we have lots of goose breasts and venison in the freezer that I need to get working on too. 

I currently own a LEM electric smoker (it's ok I guess), an offset, and an AMSN 6x6. Next year I plan on purchasing another smoker, but am unsure which one yet.

Hello Charles, and welcome to the forums!  Glad you joined us.  This is a great place to share ideas on our favorite pastimes...smoking and grilling great food!  There are lots of friendly and knowledgeable folks here who really enjoy helping one another.  Any time you need help, just ask and you'll get plenty!

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Brian, The best part is that my wife is the one that has asked me to look for a new smoker to buy next summer! After 10 years of marriage we finally have a hobby together and a it's great!
 
She's a real keeper!  Anywho.  Welcome my friend! ...expecting to see you smoke pheasant before thanksgiving.
