As far as taste goes , in many ways I like a good chuck over a brisket.  We had tacos with the leftovers

Did you foil your chuckie during cooking?  I do not foil my pork butt's as i love the bark but it seems everybody foils their chuckie.  I am going to tackle a chuckie soon for pulled beef sandwiches and would love not to foil as long as the beef doesn't dry out by not foiling.

I did NOT foil during the smoke as I love the bark also.

I seldom think of a chuck when I'm meat shoppin.  ...and don't know why.  A great cut for the smoker.

Did you use a finishing sauce when you pulled that beef?

I did use a finishing sauce.  I got it from my brother in law and will see if he minds me sharing.

Pulled chucks are even better a couple of days after the smoke. We love to use the meat for stuffed peppers and such.
I agree, we had Tacos with some f the leftovers.  Wife liked them better then the reg ones :)
