Hey, I live in Victoria, BC, the temperate part of Canada. The temperature stays nice year round, so there is grilling and smoking weather every month.
I have smoked various things on a green egg type smoker I got from Costco, but recently decided to get a little more into it and picked up a Bradly Digital smoker to experiement with.
I have been fairly successful with pulled pork, brisket, beef and back ribs, but I am tackling Spare Ribs tomorrow and am worried about trimming them up properly. I am going to use the 3-2-1 method, but I hope that I don't butcher them (please, pardon that one), before I even cook them.
Wish me luck.

Hello fellow Canadian, BCite and Bradley owner. I just got my Bradley last fall and didn't have much success until I found this forum. There is a wealth of information in the posts and the experienced members are very generous with their knowledge. I am sure you will love the forum as much as I have.
