I lowered the smoker temp on the butts to 215 for the last 5 of a 17 hours smoke in an effort to breakdown as much fat as possible. The results are fantastic! A few more pictures.

 

 

A long day in the smoke.

 

 

The hams were coming apart when I was pulling strings off.

 

 

Most of the fat broke down except for 2 ball shaped pieces in each butt.

 

 

Both butts after about 2 minutes of pulling. biggrin.gif I would highly recommend trying this if you are a ham lover.

Those loin hams in the beginning turned out excellent. No fat or anything tough to chew on in a sandwich.

I would try it at least once. The flavor is really good with the fat mingling in the meat but fat always does that...lol

Looks Great Todd !!!

I never did the whole butt into Pulled Butt Ham. I always do the top with the fat cap into BBB, and the bottom half into Butt Ham.

 

I'm wondering if some of the fat that was left was the fat that surrounds that nasty little gland??

The bark makes the eggs look a little non photogenic, but in reality they are the first bites I put in my mouth.

Go for it! You simply can not buy ham as good as the ham you make yourself. If you have any questions let me know.
