Novice smoking fool here !!!

First off I am new to smoking and just got my first smoker its a Masterbuilt digital 30 inch 2 weeks ago. Have smoked a couple things mostly ribs so far and last week nearly 4 lb of salmon. But first off before I go onto some rant I will let you know that I am from Delaware OH. and drive to Columbus everyday I work in public transportation.

 

Told my wife I wanted to buy a smoker and she said what is that, kind of hard to explain when you are new yourself to a new way of BBQing. I am finding out that no recipe is the best, that trial and error is the learning curve I will have to embrace and make note of my success and failures. Ribs I made today wasn't as moist as the ribs I made 2 weeks ago I really feel this is because I allowed the rub to refrigerate overnight compared to my last time which I allowed to refrigerate only to hours. They are still good just not what I expected. So I am finished for now hope to learn some new lessons here I am sure that I will.

Hello and welcome to SMF!  Glad you joined us.  This is a great place to share ideas on our favorite pastimes...smoking and grilling great food!  There are lots of friendly and knowledgeable folks here who really enjoy helping one another.  Any time you need help, just ask and you'll get plenty!

Thank you SeenRed for the welcome, never really knew this was harder than cooking a few steaks. It is time consuming as well as dedication to BBQing in a different way. I like to BBQ but not for me my goal is to satisfy the taste of others. And my family well they are my guinea pigs I have laid it out this way be honest with me or I can't fix it. You are not hurting my feelings you are helping me to make the food I cook better.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

welcome1.gifto SMF!  We are so glad you joined us! Would you mind updating your profile to show the other SMF members where you are located?  Ya just might meet a few neighbors!

 

You should sign up for Jeff's Free 5 day E-Course, and it's great!  This is chock full of great information....no matter what your experience level might be!

 

If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Off site links are not allowed here at SMF per Jeff in Rule #11. Not that you have done anything wrong....just a little bit of FYI for new members!

Welcome to you TheHermit. I am a new member here also and have had a smoker since early April. A lot of trial and error is right. I have had successes and failures. My best advice I can give you is to sign up for Jeff's 5 day E-course. One other thing I am learning from Jeff's book, "Smoking Meat", is to keep a notebook and write things down. It has helped me to not make the same mistakes, and to build a little bit on the smokes that have been successful. I have learned much from this website also, just browsing around the forums. These folks are pretty good smokers, very friendly, and very helpful.

Greetings Mr. Hermit!

 

Let me suggest something, boy no flys on brother is there.... Get a notebook, journal, binder, heck even a flash if you think you can keep one alive, and take notes. You know kinda like a snipers kill book? Divide it by meats write the size, smoker temp, time, IT's, stalls, preparations, foils, mops, etc etc etc..... You'll be surprised how much it will help you the next time. After the smoke, write down what you liked, what you didn't, what you think you'd like to tweak next time. Come here to the boards and research for answers and then maybe discuss your ideas. Folks love to help and share. But they must know the hows and whys.

 

Every time you narrow down the perfect smoke, but to get there you must know where you have been. Besides, it would be a shame it get that perfect smoke and not remember what you did different.

 

I see the Guru's, those folks with the OTBS (Order of the Thin Blue Smoke) under their names, are already helping you. If I or really anyone could help you in your search for the perfect smoke, just say Hi.
