Can you buy the boneless Turkey, Chicken, etc. like what is used at a sub shop that hasn't been cooked? I would love to buy a huge turkey and smoke it to make my own deli slices.
I had been trying for years to get my turkey to look and taste like deli turkey. I gave up after watching an episode of "How It's Made". Deli turkey is made by injecting all kinds of chemicals into it then tumbling it in a huge machine for hours, then put in bags (2 per bag) and cooked to get the shape right. I still like the stuff but I don't think you can (or want to) duplicate the process at home.
Badbob had the answer I was looking for. I already do boneless turkey breast along with other meats. But I was wondering about that nice big round log I see at the deli. Now I don't have an excuse to get a really big meat slicer...Thanks all!
