Fresh 16" pepperoni going on

Crispy crust...CHECK

Love the occasional pizza on the smoker...especially in the Summer time, keep the heat outside!  Smoked with some light smoke @ 250 increasing to a little over 300.  The direct heat crisps the crust up nicely!

Thanks Mr Mule!   I'm going to start trying some Papa Murphy's pizzas on the drum...they're supposed to be really good.

Thanks Kat and Alesia!     One thing learned from cooking pizzas on the smoker is they sure don't need much smoke....It needs a fraction of what meats need, the dough just absorbs it like a sponge!

I've never done One on the UDS. I have smoked a bunch of them. I prefer a hot fire and more of a woodsy flavor as aposed to a heave smoke flavor

David you should definitely do one on your drum...it won't need the high heat like other smokers need since the direct heat is coming straight up with no baffle.  

I'm with you on the smoke, it just doesn't need much.

I've got that one covered....Let's see, hmmmm  OK.     The sauce is my veggies?, the pepperoni is my protein, the cheese was the dairy and the crust was my grains!

Just what i had on hand which was Mulberry...but no matter what kind of wood i use very very little.
