So I am both old and new to bbq. I was very active and as life will do on occasion, things dropped away for a bit. This seasons adventures started with the notion that we needed new equipment because my spouse has been decorating mad. Whilst I was at work he "surprised" me with a (wipe your tears from laughing folks) a very stylish copper and stainless gas grill. I didn't take to it, bit he likes it for fast and lazy cooking for large entertaining. Naturally, I ruined the entire patio decor by adding a large smoker/grill Lang hybrid. I get fewer complaints when he eats a half slab in a matter of minutes though.

I am not a competitor, but I am competitive so I spend a lot of time tasting and comparing and taking it home and perfecting my own. I have only disappointed myself. :) Now I enjoy teaching younger people the art of cast iron cooking and old fashioned bbq.

By the way. I LOVE Mesquite. I grew up in the southwest and it was everywhete. Here in Ohio you wind up with a lot of hickory and applewood. I will sometimes order in mesquite, but not that often. I like to add moisture to the smoker so you can find all kinds of fluids in the tray on my grill. Just depends on the mood and the day.

We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

You should sign up for Jeff's Free 5 day E-Course, and it's great!  This is chock full of great information....no matter what your experience level might be!

If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Thanks! I did read the TOS. I am a little concerned about the SPAM rule. Only because I have been to Hawaii and will vacation there again. If they try to smoke it and I have to eat it, I will be compelled to share. ;) (oooh, day one and already sassy.. )
