Can't believe I missed this one.  Great job, Disco!  Double smoked ham is still on my list to get to.

Nice job with the Q-view and narration as well.  That's what this place is all about.  Sharing the technique and "telling the story" so others learn.  A+, man!

If you like sticks a bit more Spicy (not a whole lot), use the ingredients list on my "Smoked Bear Loaf", but follow all of the other instructions on the "Unstuffed Beef Sticks".  They are both in my Signature.

All I did was copy Bearcarver's recipe. If anyone wants to share this technique, I suggest going to his excellent thread http://www.smokingmeatforums.com/t/141903/double-smoked-hams-times-4-step-by-step. This thread gives a better description and has all the recipe details on it.

I suggest bookmarking it. I did!

Leave a couple of inches of meat on that bone and toss the whole thing in a pot of red or white beans. i save the bone from every ham i cook.

 I think i cook a pretty good batch every now and then.

LOL----I love Ham and Ham & Cheese Sammies, and Ham & Eggs from slices of Ham, but the small chunks & the stuff around the bone, and the bone go into special vacuum bags that I mark "Ham & Beans". I never cared much for Mac & Cheese, and very little Pasta ever thrilled me. Not to say I wouldn't eat it, but I wouldn't waste my Ham on it. I'm picky that way.

I know i'm really really late on this. But Disco that is one gorgeous ham my friend.  

I do a lighter smoke on the birds, a little more on the hogs, and pour on the coals for the beef.
