Help with Alternative Ways to Serve Smoked Butt

Hi All,

First of all I just want to say, WOW, this site rocks!  Okay, now that formalities are out of the way, I need some advice/suggestions on some alternative ways to serve up smoked pork butt.  Of course there is the pulled method (which I've done, and is great) but want to try something different.  I have about 10 or so hours on my hands and have a 6 pounder to work with.  I can start smoking earlier in the morning if more time is needed.  Any good advice out there? ...GO...

You can make some really great Bruinswick Stew outta the left overs.  Also...around here BBQ stuffed taters are the bomb! Salads are great and even stuffed pasta too.  OOOOO.....what about a BBQ pizza!

Hello Danaconda.  I often pull the butt from the smoker at IT of round 185-190 and slice it ( after resting ).  Another great option is take it to PP IT and then use some shredded in a pasta sauce.  Sky is just about the limit.  Let us know what you decide.  Qview.  Hope all goes well.  Keep Smokin!

Pizza... Thats sounds awesome.  I was thinking about trying a pizza on the smoker.  Have you ever tried that before?  I read somewhere that it is best to throw the crust on the grill and cook one side then flip it and put the toppings on and let it go.  I'm just wondering how long it would take for the pizza from the time you put it on, to the time it comes out?

How long do you let it rest before slicing it?  This is what I wanted to try, but still serve it hot.
 
Some of our favs, stuffed baked potatoes, enchiladas, nachos, tacos, tamales, lots of leftover sammies for work...
 
Hi.  I prefer sliced pork butt to PP.  If you wrap in foil and towels I'd rest at least an hour.  If you need to hold the butt for a later serve time, it will stay hot for 3-4 hours easy in a cooler.  Let us know how it goes.  Good luck.  Keep Smokin!

BBQ Pork Casserole is pretty awesome for left-overs. Search for BBQ Beef Casserole online and just substitute  the beef for pork. It is always the first casserole dish to be finished off at any party.

At a stall point 168• this one's fussy, but everything I read points to a delicious tender butt. Pun intended... lol just added some hot coals to crank it up to 250•
 
Hi Dan,

Yes, I grill one side for a couple minutes then flip it. I use a little BBQ sauce, then add the meat and anything else. Its key to use cooked meat, like left over pork and then add cheese, veggies, or whatever else you want.. I have also pulled it off the grill a little early and thrown it in the smoker at the lowest temp possible to keep it warm while I grill more pizzas. I also let people pick their own toppings, etc, at parties. 

There are lots of different opinions but I do the pizza directly on the grill, others use pans or stones.

Have fun -- both pulled pork and pulled chicken are my two favorite toppings.

Hi Dan.  Pork butt is very forgiving but I would not push it beyond 250.  Just my opinion.  Keep Smokin!

I agree, it's holding at 245 steady and it just crested the stall at 172• it's just gonna take its time before its nice and tender.
