Hello SMF;

Received my Masterbuilt XL for Christmas 7 months ago and have used this site extensively for advice and tips (always as a lurker).  Since I found myself on the site several times a week I knew it was time to join.

I live in Vegas and fight the heat to keep the smoker cool enough in the summer to not overcook stuff; additionally I am a home brewer so plenty of cooking going on around the house.

Hello Brew and welcome to the fun.  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  The trial and error method works well.  We will try to help you keep the errors to a minimum since we already made them for you.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Welcome To the SMF Brew! Just wondering what steps you take to keep the temp down? I live in NW Indiana, doesn't sound hot but temps get into the mid 90's regularly in the summer with VERY high humidity and I combat the smoker getting to hot too. I just close it all down and spray coals with water. Any tips would be appreciated.

If you didn't read the Terms of Service notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums. Rule #11......"Off Site Links are not allowed here at SMF" is something new. There are other simple guidelines for all of us to remember as we interact here.

The black smoker sits in the NV sun all day and doesn't get shade until 6-7 pm; so if I am daytime smoking I usually crack the door to the Masterbuilt XL during the smoke process. 

I made jerky the other day (smoked at 175 if think), and it was 105 that day.  Wound up waiting for the shade, then hosing off the open smoker to bring the metal temperature down before lighting the fire.  I think I need to do an XL mod and lower my cast iron smoke tray because I have to turn the valve way up to generate smoke (which also really heats the inside of the smoker).
