This is my practice run before the big show. It's also a chance to try out different rubs. I'm not doing the brine version because I'm looking for a Memphis Dry Rub feel. Here are the rubs I'm trying and what I'm doing with the left over bones.
I'm also doing tangy smoked cabbage wedges. I included a pic of the super secret cabbage marinade ;)
