Nieces 1st Birthday Bash - Caja China "Holy Moley" Chicken

Ok folks...Spring 2013...better late than never. Here is the magic box and the eight birds that sacrificed themselves for the greater good. Everyone ate well, no leftovers, and nobody got hurt.....

Prep the box with tin foil to save on the clean-up

Loaded box with the birds....missed a picture

Started the coals......

......those coals are hot

OOOOOOOOOHHHHHH YES! - two hours and they were done!

Looks like a winner winner chicken dinner - moist, tender, no smoke but the AMPNS will be used next time around........

Keeping them warm

close-up

Time to cut them up!

Good workers

1st Birthday Choices - Shot Glass, Cross, or dollar bill -------she chose the cross......not like her uncle:)

To be rich in all things that truly matter - I am indeed blessed.

Great looking chickens! Do you have to fip them part way through or just let them go? How are you going to get enough air flow for the AMNPS to stay lit in the box?

Chickens went for 1.5 hours (they were 8 lb birds)....I then flip for the last 20-30 minutes until the bottom skin crisps up.  As for the AMPNS......there are two removable rails on each end. Will give about a 1/4" gap on each end. I plan on putting AMPNS in the middle. I will be doing 6 pork butts and two briskets in the box on friday....with the AMPNS.......I'll provide an update to let you know how it went.

Chef Perry Perkins has a thread where he did briskets this way....said it works with minimal increase in cooking time. We shall see.

Thanks SH....she is a pistol!

The caja china is a great tool for large gatherings, pig, butts, chicken, etc.... It produces a great product. Its a charcoal hog but its not an every day type tool. Large group cooker.
