Just purchased a Master Built electric smoker at Sam's Club.

First batch did not turn out too well.

Everything was jet black. Use Jack Daniels wood chips form oak barrels. Cooked Johnsonville Brats, some pork chops, and two Salmon filets.

220 degrees for two hours. Pulverized salmon and pork chops. Brats were moist and delicious but black. Only added wood chips once after the initial load.

Any suggestions.

Welcome to the forums!  Glad you've joined us.  You've found a great place to learn and share ideas on our favorite pastimes...grilling, smoking, and curing great food!  There are lots of friendly and knowledgeable folks here who really enjoy helping one another.  Just ask any time you need help and you'll get plenty!

Sorry to hear your first try was less than perfect...have you checked the accuracy of the stock therm?  They are often not very accurate and you end up cooking much hotter or cooler than the thermostat says.  Best advice is buy an accurate digital thermometer, such as the Maverick ET-732, to double check the accuracy of your cooking temps.
