Mayo Chicken breasts

After modding out my Char-Griller I grabbed the first thing I saw in my deep freeze and gave it a try. I covered 11 boneless skinless chicken breasts with some seasoned lime mayo. (recipe below)

 

They turned out great, very moist and full of flavor. I served them with some of SoFlaQuer's Carolina Mustard sauce, now a favorite at my house and some Atomic Buffalo Turds.

There was a full basket here, but they were gone before I remembered to get the camera out!

 

Completely cover chicken breasts with a mixture of

2 cups lime mayo

2 tbsp smoked paprika

1 tsp cayenne pepper

Smoke for about an hour at 225* until internal temp reaches 165*

Hey , Rocco.  welcome1.gif  to the Flock.   Your ABT's and Chix look good. The Lime Mayo is (excuse my ignorance) a new one on me...icon_redface.gif. Is it an OTC product or do you add lime juiceicon_question.gif

 

Makes me want to try it on my Mayo and Corn recipe.

Oldschoolbbq, the lime mayo was OTC, I believe it was a Best Choice brand. You could probably add lime juice to regular mayo to achieve a similar taste though. This is the first time I have cooked with it, I'm going to be looking for more things to use it on now.
